The answer is simple, yet deeply rooted in tradition. The clay Ketsi is more than just a piece of cookware; it is a symbol of Georgian culinary philosophy that has remained unchanged for centuries.

What is a Ketsi and why is it unique?

Ketsi is a flat or slightly deep vessel fired from a special type of clay. Its main advantage lies in its ability to distribute and retain heat evenly. When we place a Ketsi on grape vine embers or in an oven, it heats up gradually and releases warmth for a long time, allowing the food to cook in its own juices.

Why does food cooked in a Ketsi taste different? The porous surface of the Ketsi absorbs the aromas of the food and releases them back during the cooking process.
